Perfect evening
The place literally knocked us out. Location with wonderful interiors and a relaxing atmosphere, truly capable of welcoming you. The staff is very kind and helpful and the environment is large and spacious. Our compliments undoubtedly go to the local dishes and the off-menu dishes, which were family recipes. We tasted an appetizer of lamb coratella which melted in your mouth, two first courses of which: durum wheat fettuccine with artichokes, bacon and sheep's ricotta which were a delight and finally homemade pappardelle with a juniper flavored ragout which were the end of the world. But the mark cum laude goes to the desserts: a revisited tiramisu, which is a gamble, but allow us to say that the chef absolutely knows his stuff; and finally a homemade cannoli with custard and a strawberry and raspberry syrup (if I still remember correctly) Quality/price 10/10

Historic restaurant in Olevano Romano, mentioned in multiple guides. Typical restaurant atmosphere, pleasant and rustic. Presence of a fixed menu with "iconic" dishes of the restaurant (such as the famous cannoli) and addition of a seasonal menu with some always different proposals in line with seasonality. We started with: Platter of cured meats and cheeses: spectacular and very particular cured meats... the presence of cheeses is a little small (only 3 small pieces) but of excellent quality. Standing ovation-worthy grilled artichoke with mayonnaise and mint. The cod crisp is also excellent: crispy and light fried. We then continued with the pappardelle with sheep ragù, pepper and orange, very good (perhaps to my taste too much peppercorns in the sauce). The Abbacchio trilogy is very good. We then took the steak with a slightly tough meat (among other things specified in the menu) but tasty and tasty. Excellent vegetables and potato chips. The desserts are good (puffed cannoli and biscuits offered with coffee). Nice wine list with a wide choice of natural wines. High prices, but in line with the quality. Very kind and attentive service with some timing problems if the place is full. Excellent address to return to.

We have been there several times for lunch and never been disappointed. Raw materials treated in the kitchen in an excellent way and of excellent quality. Courteous and helpful staff. Good wine list. Prices are honest and appropriate for the type of restaurant and the quality of the food.

A Temple of Gastronomy!
I hadn't been to this place for a long time but, assuming that this is possible, I noticed further improvements in the richness of the offer. When cuisine is based on tradition, the search for raw materials becomes an essential fact. The manufacturer is indicated for each one and there is full traceability. Great skill of the chef, who knows how to add well-calibrated innovations for harmony and taste. The cannelloni, which has always been a specialty of this place, are always sublime with veal meat pie, wrapped in a soft egg pasta. One can only wonder why in the recent space trip, where they brought Italian foods into orbit, they didn't think of Sora Maria's cannelloni. Probably because they would have finished before the end of the trip..... The pappardelle alla bifolca with white courtyard ragù flavored with juniper, citrus fruit and parmesan are unrivaled. His Majesty the PGI Roman lamb manifests itself in a trilogy of excellence: leg and shoulder rolls stuffed with herbs and barbecued pecorino, breaded cutlet with potato chips and Olevanese-style coratella with onions. Among the desserts, among a vast offer, the choice of espresso tiramisu with artisanal raw milk mascarpone with Olevano pasta, crunchy textures and Gunaja Valrhana chocolate was very gratifying. A Cesanese Riserva washed it all down! Regrets? Yes! That of not having been able to try other specialties that, from the menu, winked at us. The promise? To reserve them for next time. The wine list is vast. The welcoming environment and adequate prices. Attached photos that well document what is described.

It's the second time I've come to this place and not with ease, as it's a difficult task to be able to book in a decent time... but you'll understand the reason for such a long wait only after you've been there! I could end the review like this, we know that when it's worth it you have to suffer. Instead I want to continue writing to encourage those who, like me (not very daring), at the sight of a sui generis menu fear they will go without food. AND INSTEAD, PRAISE THAT MENU, PRAISE THE CHEF, THE SORA AND THE ARCHANGEL because eating here - even what a person may think they will never taste in life - is truly something transcendent. Dare people, dare.

Cozy atmosphere, very good dishes and definitely at a good price considering the high quality. The only slightly negative note: intrusive waiter.

We found very fresh porcini mushrooms and white truffles from the Simbruini mountains. Psychedelic experience - in a metaphorical sense obviously - that we will not forget. Next commitment? Bring friends. For Saturday and Sunday you must book weeks in advance. I forgot: impeccable service and fair prices for the quality!

When you sell a reservation that has a prepaid fee AT takes a commission on that fee. This doesn’t really make sense because it’s an expense the seller incurs not part of the profit that is shared.
For example:
Carbone NYC fee to book table for 2 is $108.88
If you sell it for $200 on AT you get $140 from them.
Your net profit is $31 and AT collects $60 in fees.
It would make more sense not to charge commission on the upfront fee as this creates a disincentive and results in higher costs for buyers.

Agreed. Ultimately not addressing this month after month is clearly resulting in a drop in certain venue’s rankings & sales.
