They have always had great food here, and we have had many memorable meals here over the last 20 years. When we got our first course it was obvious there was a change for the better. First what it is not: For inexperienced diners, Vegans, Gluten freebies or children. f you just want food, go somewhere else. This is an experience, like going to the theater. You do not get to choose what you will eat. You choose one of the three tasting menus, eight, ten or twelve courses. We did the ten with wine pairings. I would recommend NOT eating anything after breakfast the day you come here for dinner. Another tip, don't eat too much bread during the meal, I know it's hard. First up is the Amuse Bouche, one of the items is a crispy waffle with cream and there are three other little things, herbs and trout roe. The after an appropriate break, comes the next course of is a fluffy white ball with what looks like caviar on it, but it is olive oil manipulated to look like caviar (molecular gastronomy) underneath is a Romesco of sundried tomatoes and cheese. The next dish is so creative and one of my favorites: It looks like a brown foam, b as soon as you touch it with your spoon it devolves into a cold onion soup. The delicate croutons are underneath and I don't know hw they keep them crunchy, amazing dish for a warm night. Net up is a fish dish, that I can't recall at the moment, but good. Meat course next focusing on pork: Catalan sausage on a tiny grill with live charcoal in it, you also get a seriously tasty piece of pork roast. Room for dessert? That's good because there is a Pre dessert, dessert and after dessert. We took the after desserts with us to enjoy the next day. We were impressed with the selection of local wine with each course. Can't wait to come back next year!
