I had heard about Gish for a while but couldn't get a table last summer when they were doing yelp reservations. Now that it's been a few months and they're on Open Table, it seems to be easier to get a spot. That said, you definitely still need to plan ahead. They have two seatings each night - 5pm and 7:30pm, and it's a fairly small restaurant in a random strip mall. I had requested an outdoor table, which they graciously set up for us, but then it ended up being very cold, so they offered us chef counter seats, which was a bonus because it was spaced out from the other diners, and we could get a firsthand look at the action in the kitchen!Even though we came in early March, they were still on the February menu, which worked out since it was all foods I like. I'm not a fan of offal nor lamb, which I saw on some prior menus, so I was a little worried, and I didn't want to be that difficult customer making ridiculous dietary preference requests at a small restaurant. The tasting menu was $79/person with a wine pairing available. They also have a small but well curated wine list, and corkage is $25/bottle. 1. Beet Radicchio Salad: radicchio leaves, golden beats, anchovy, and a super umami xo sauce. We found ourselves happily surprised with this dish and actually thought it had the most complex flavors of the night.2. Squid mandu soup: pork, kimchee, squid dumplings, steamed, then covered in a clarified smoked anchovy broth (slightly reminiscent of dashi) with a garlic confit oil. The dumpling texture had a good bite, and the filling was generous 3. Pork chop: with beurre blanc and trout roe. The pork chop was huge and was cooked just right and had a ton of flavor. The highlight was actually the pickled burdock and fennel on the side, which was a nice contrast to the beurre blanc 4. Misoogaru cheesecake: the cheesecake had a subtle but fragrant roasted grain flavor than reminded me of genmaicha and was such a creative take on traditional cheesecake. It came with mini Korean rice cakes and a hint of lemon. This was an excellent dessert - it tied in perfectly with the Korean theme and was not too sweetAgain, we were lucky to have the chef's counter. All of the staff were so gracious and attentive, and it was so nice to watch them preparing all of the dishes. It's definitely worth the effort to get a reservation, and the whole dining experience is a solid value for the price. Don't be fooled by the random strip mall - it's a hidden gem inside!
