Wonderful Birthday Celebration
We were looking for a reasonably-priced restaurant in Aspen for a birthday celebration and found Pyramid Bistro! It was a warm evening, so we sat on the patio. All 3 mains were declared delicious by their consumers and we ordered 2 deserts to share - chocolate mousse and raspberry sorbet. Wish we could go back again. Sad that the owner is retiring and moving back home. SOOOO happy we decided to come to this restaurant.

What a treat to enter through a book store!! After youโve picked out a book, head up the stairs to a lovely patio for a wonderful meal. It starts with a multigrain bread and vegan pesto and then I ordered the sweet potato gnocchi, which was fabulous. This is a great place for a solo diner and donโt forget your book!

The restaurant promotes itself as a healthy alternative. We ent for lunch and the duck wasnโt available. Our two salads with added protein were very good.

Pyramid is behind a book store in Aspen, so can be hard to find. In fact, we went in through the book store, but exited in the back as the book store closed before we finished our meal. It seemed to us that so many restaurants in Aspen seem to have focused on Asian food. Pyramid was along those lines. We began with the vegetarian pot stickers, which come recommended by many on Yelp. They were ok, but I would not order them on a return visit as they did not have much flavor, but no doubt were the healthiest pot stickers we have had. Our wine choices were the Malbec and the Chardonnay. Both were pretty good and reasonably priced. The chicken stir fry was kind of bland and the chicken was dry from overcooking. The duck was very good and recommended, although a bit tough. The best part of the evening was the dessert. A somehow reasonably healthy cobbler that maintained a great taste. Service was attentive and friendly. Our water was consistently refilled without requesting and the waiters worked very well together in coordinating taking care of us.

This was my 1st time to this restaurant. We have the risotto and dark breast, Both of which were excellent. All the food was fresh and delicious. Service was also excellent. Highly recommended.

This restaurant was a delicious surprise. It was like eating delicious healthy food in a Tree house. The patio is so nicely done and enclosed that is feels like a Tree house. Super fun!

The Pyramid was a wonderful find. The food is fresh and beautifully presented. The mango spring rolls and the pot stickers were great appetizers. Everything that we had was very good.

Started out with the gazpacho and fresh summer tomato salad. We then had the Cajun salmon and curry with chicken. Ended the meal with wild berry cobbler. Everything was great and fresh

My husband and I have been eating here for many years, and the food is THE BEST in Aspen! Their food is always beautifully presented, and cooked to perfection. We love eating on the outside deck in the summer months. What we really love is being able to eat almost anything on their vegetarian/vegan menu. And for those of you who love fish, our guests love their non vegan options. Martin, who owns the restaurant, knows all of the great recipes! And one year we were there for our anniversary and had just arrived into town, and Martin made several different deserts for us as a gift. We usually don't even make it to desert! And...it's so nice to walk around the beautiful bookstore below either before or after lunch or dinner!

Stay away if you know a little about fine food! I was so badly surprised when we got to the restaurant, the entrance from a side door, through a smelly kitchen. The place was cute, we ordered many dishes, all of them were bad. Worst crispy kale we ever ate, salad tasted so bad that we thought something was wrong inside. Duck came with some completely strange mix of โeverythingโ side dish. Wine tasted like supermarket cheap wine (we paid 15 usd a glass). Skip this restaurant. You wonโt regret!

We ate outside on the upstairs deck. The chef uses organic foods for his nutritious, clean meals. We tried the mango spring rolls, chicken stir-fry and a delicious shrimp concoction. Very filling & satisfying. Wait staff very attentive. Would definitely eat here again.

The food at Pyramid Bistro was delicious! I had a summer tomato salad and the sweet potato gnocchi. I highly recommend both. My pup and I sat on the front patio and enjoyed people watching with a nice glass of wine.
I canโt wait to visit PB the next time Iโm in Aspen!

Great choice for vegetarians
On a repeat trip to Aspen we looked forward to being able to go back to Pyramid Bistro which we discovered once before. We were not disappointed. For vegetarian fare this is probably the best choice in town. Large and varied selections and everything we had was delicious. Service is great and location is easy to get to and fun, above a local bookstore. We went twice the week we were just there and will make this a regular stop every time we get to Aspen. We went for dinner but imagine lunch would be equally as enjoyable and delicious.
