I write this review as a regular visitor to Japan. Not only am I a regular visitor to Japan but I have travelled the width and breadth of Japan and sampled the extraordinary range of regional and seasonal cooking on offer. As well as of course countless sushi and sashimi experiences. Therefore I say with some confidence that I know of what I speak. We sat at the counter upstairs at Defune and had a light lunch consisting of sushi and sashimi, as well as a salad and miso soup. In summary ? For the astronomical prices charged, the quality is simply not there. The fish was not of the freshness that you would expect from a restaurant of this calibre: - The saba (mackerel) had the oily nature and distinctive taste that is the hallmark of mackerel that is not perfectly fresh. - The unagi (eel) was not worthy of the price charged. Mushy and flavourless. - The ama-ebi (sweet shrimp) was slimy - The otoro was OK but evidently not of a high quality grade Need I go on ? If you were to pay Defune-level prices in Japan, you could have some extraordinary sushi and sashimi. Unfortunately in Japan, the sushi and sashimi served at Defune would best be described as "average". If the prices were lower at Defune, I might have been more light-handed in my review. Unfortunately the prices are what they are, and so there's only really one word .... unforgivable.
