for the amuse bouche:all were good, enjoyed them all somewhat equally. guava ice with oyster was an interesting combination but helped bring a good flavor combination with the brininess of the oyster and subtle sweetness of guava icegreen onion: reminded me of green onion crackers i had as a child. pleasant surprise, my favorite of the three shiso leaf and tartare: shiso leaf flavor was initially a bit weird but then it was ok. tartare was good but felt a bit salty at some points dungeness crab with pomelo: crab was very sweet, don't taste much of the pomelo and the upper layer of jelly is a bit flavorless. highlighted the freshness of the crab pretty well, you could taste the sweetness of it. simple dish in terms of flavor complexity but was a nice start to the night 8.5/10beetroot: beetroot has a really nice natural sweetness with a nice assortment of flavors from the glaze. there were baked(?) leaves that added a nice subtle flavor and crunch to the beetroot. would have preferred if the leaves were a bit crispier but it was a nice addition 9/10beluga caviar with parsley root and dill: all around very solid dish. caviar was meant to be the star of the show and the white mash around it definitely helped showcase it. i'm not one to normally order caviar, but this dish was nice and i enjoyed it. the dill green sauce around the edges added a little bit of briny flavor to an otherwise quiet dish. 9/10pork and tapioca dumpling reminded me of a chinese style meatball with rice around it. i enjoyed it but it was an interesting texture combination with the pork and tapioca ( and i believe there was mochi inside as well). pork was a little bit sweet, reminded me of cha-shu. good but did not blow me away 7/10egg yolk: amazing dish. the egg yolk was soft but still solid, and the white sauce around it paired well. i enjoyed the crispy bits and onions around it, and when you dig deeper into the white sauce you get a bit of sweet jam, which was a nice contrast to the richness of the egg and white sauce. this dish was amazing, both visually and taste wise 10/10bread and butter: i thought the previous dish couldn't be beat but i have to reconsider after having their house made bread and butter. i was literally speechless after one bite, the inside is perfectly fluffy and the outside is the most perfect crispy crust. i'm not sure how they did it but they found the perfect balance to make the crust perfect crisp while also not hurting the roof of my mouth. wow, this might be the best bread i've ever had in my life 10/10grilled monkfish with dashi glaze: thought this dish was ok. the flavors were good but i'm not normally a fan of cooked fish(besides maybe miso cod). the texture of the monkfish was more chewy and meaty than i expected, maybe even a bit like juicy chicken breast. there were small pieces of cauliflower but i don't think they added much this was probably one of my least favorite dishes 5/10grilled pork belly: looked like ham, tasted a bit like ham too. thought it could've have used more sauce, the meat ended up tasting a bit dry and i would've liked a drizzle of the sauce on top. the overall dish wasn't bad but i don't really like ham so that kind of threw me off. 5.5/10mushroom scallion fried rice w/ chicken broth: i also got the truffle supplement with this dish for 35 dollars extra. the truffle was mixed into the fried rice but honestly i couldn't really taste it. the fried rice was good and had the scallion flavor in it, but otherwise felt kind of boring. the chicken stock helped make the overall dish a little saltier but in the end it was still rice with scallion oil flavor. the sugar peas were refreshing and added a bit of sweetness 6.5/10chrysanthemum ice cream with mango marmalade and other stuff: not really a fan of chrysanthemum, kind of reminded me and soap. the mango marmalade was tart and the ice cream at the bottom was sweet. i could taste a bit of salt too. the flavor combination was good but honestly chrysanthemum threw me off too much to really enjoy this dessert3/10ice cream sandwich: tasted like an elevated choco taco. flavors were simple but i enjoyed it a lot. 8/10toast with passion fruit + durian cream: i don't remember the name of it so i'll just call it toast. i really liked the cream, although i didn't get much durian flavor. the toast was ok on its own, definitely needed the cream to add some flavor to it. 6.5/10final small dessert bites: they were all small. enjoyable but nothing much to write about. favorite was the coconut herb ice tube overall rating: 4/5i would've given the first half of the meal a perfect 5/5, but i didn't enjoy the second half of the meal as much.in terms of service, staff were friendly and talkative, did not judge us for wearing sweatshirts and jeans to a fine dining restaurant ambiance was a bit dimly lit as you would expect from a fine dining restaurant
