Another five course tasting menu where, yet again, you don't choose anything beforehand. You answer the allergies/restrictions question and off you go. First course, a lightly seared bonito, which was exquisite. Served with some sliced cornichon and peeled red pepper on the plate. Next came foie gras on a butter cookie with red currant jam. Good, but less impressive than the bonito. Next, sea bass with lard and white beans - a perfect cook, but it could have used more salt. Good, slightly less impressive than the foie gras. Next, the "Beef Wellington" which, rather than a filet mignon, was stuffed with chopped duck and foie gras and came with a side of highly vinegared greens (which were absolutely necessary for the richness of the duck). This was slightly more impressive than the sea bass. For dessert, a panna cotta with a tarragon infused olive oil ice cream and citrus gelee. This was mostly a mistake; cleanly presented, it was not very good. 3.5 rounded up
