Iceland's Michelin-starred Dill was founded in 2009 by chef and owner Gunnar Karl Gíslason. In 2015, Ragnar Eiriksson took over the baton and was named the first Michelin-starred restaurant in Iceland in 2017 (there are only three Michelin-starred restaurants to date). The following year, Kári Þorsteinsson, who had worked at Noma and Grillið in Reykjavík, became the chef, and was subsequently named the best restaurant in Iceland in 2024. Despite three different chefs, the new chef's menu is still full of natural storage rooms using Iceland's natural climate as a tool, supplemented by Nordic techniques such as fermentation, smoking, and pickling. I happened to be traveling 🇮🇸 and really wanted to try a menu made up of local farms and seafood.

Great restaurant, can be even greater

Dill is a fabulous 1 star restaurant. Delicious innovative cooking. But it could earn a second star with some improvements: 1) Don't repeat/overuse ingredients: caviar, sour cream, heavy butter sauce are all terrific. But use them once a dinner. 2) Fried foods like the "cigars" are risky-- but dried and light is a plus and much better than oily. 3) Have tables cleaned between certain courses. But a great and worthwhile dinner.

An amazing experience, start to finish

My wife and I ate dinner at Dill on our 20th anniversary. The food and service were outstanding. This is small bites with multiple courses. Each course was delicious with multiple tastes and textures for each item. The wine and beer (for one course) pairings went well with the food.

A Michelin-Star fine dining restaurant nestled in the heart of Reykjavík, Dill Restaurant was a delight. Having done 10 days in the outskirts and tried many cafes and restaurants, I felt that the flavour profile of Icelandic food tends more towards the earthy and sour palette (I may be wrong but it's my opinion). Hence it may be an acquired taste for some but I am ok with it. I had dinner here on the last leg of my Iceland trip and enjoyed every minute of the meal. Having been to numerous fine dining places around the world, Dill's food was true to its roots, thus it's something unique and the dishes were all pretty delicious. It also tends more towards the organic and earthy taste of ingredients, along with interesting pairings which I appreciate. I took the alcohol pairing and my husband took the non-alcohol pairing. I must say I was pleasantly surprised at how thoughtful each drink was paired and how most of it were exclusively sourced and crafted for the restaurant. I tried my husband's non-alcoholic drinks and they were all very tasty too. The alcohol pairing weren't all wines but had a variety of beer, wine, rose etc. Even the glasses used for each drink were so beautiful. Service was excellent as they were efficient and attentive. The ambience of the restaurant was nice and I loved the window seat we had. If you're looking for fine-dining in Iceland, I'd recommend Dill anytime!

I’ve never been to a Michelin Star restaurant before, and good grief it was amazing. Not only was the food incredible, the staff were just wonderful. As we left I was compelled to wave goodbye to the kitchen and tell them thank you. I probably looked like an idiot, but I don’t care, dinner was glorious.

Inedible Sustainability

I am sad this was my Anniversary special surprise. This was far from a Michelin 5 Star restaurant when serving unpalatable leftover pieces and parts that most first class restaurants consider waste, making it difficult to keep my gag reflex in check. I stopped eating completely with the smell making me nauseous. I shared this with the manager on duty aside from other guests to avoid making a scene and was dismissed under the false pretense of a sustainability menu.

I dined at Dill in Reykjavik on May 11 for dinner. While the food was enjoyable, it lacked any standout dishes and felt overpriced. The wine pairing was well-curated, but the inclusion of one excessively large beer portion left me feeling uncomfortable afterward. The service was generally friendly, with one notable exception. A bespectacled head server in a black jacket, who appeared to be more senior than the other staff, was rude and cold. When I inquired about the restaurant's sustainability practices, particularly relevant given their green Michelin star, he became visibly irritated. This negative interaction significantly detracted from my experience and is a key reason for my 3-star rating instead of 4. The ambience was pleasant, though slightly marred by the noise level. Overall, Dill has potential, but some aspects of the experience need improvement.

Very good culinary experience

A very good culinary experience. Some dishes were better than others but there was a nice consistency throughout the meal. I especially enjoyed the 2 broths, including the grilled vegetable broth, as well as the lamb and dessert. The service could do with a few minor adjustments. We had ordered 2 glasses of champagne as an aperitif which the waiter forgot to serve us. He realised this when serving the starters. He promptly served us, pointing out that the champagne was on the house. Error rectified, gesture appreciated. The bottle of wine I chose from the wine list was not in the cellar either. The alternative bottle suggested by the waiter was much appreciated.

Felt rushed

Felt rushed from the start which is not what we expected from a restaurant of this calibre. We were never informed that there was a second sitting and were told we couldn’t sit at the window seat as they were reserved well in advance even though two double seats sat empty until about 9.30pm. We wanted to savour the food in all its glory but felt like we were numbers to be moved along to the quickest finish. Food was amazing but wine was average.

A Dinner We will Always Remember and location tip

A dinner we will always remember! This was an amazing culinary voyage and a highlight of our trip to Iceland where we got to sample common and unique Norwegian foods. Every dish was prepared with such a magnificent blend of flavors and artwork for the eyes with an explanation by the person serving the dish. We were there over 3 hours and the tasting menu covered about 16 or 17 dishes. There was a set food tasting menu for ISK 23,500 ($172 per person) plus a wine and beer pairing for ISK 17,500 ($128) or a non-alcoholic pairing for 13,500 ($99). Expensive but a totally unique and unforgettable experience. From normal things such as: - Cod fillet, wasabi, sol - dry-aged lamb, lovage, mushrooms - Blue potatoes, dill, sour cream to items that scared us a bit: - Pink footed goose legs, celeriac - not foot or legs seen and the meat was tender and delicious - Cod tongues, cabbage and tomato - I was wondering whose job it was to cut out the tongues - this looked like normal cod pieces, but it has a softer, more buttery flavor - Braised lamb head and shanks, kale, radishes - we were picturing the James Bond movie where he was served a sheep's head with the eyeballs looking at him. Fortunately, no eyeballs or head was seen, and the meat looked and tasted like a tender pulled pork Truly, each dish was a work of art, love, and hard work and tasted as such. I was feeling a bit sad about my own culinary creations which while pretty gourmet have never reached the heights of these dishes. Ah well, better to just enjoy the labors of love in each dish and not have to worry about washing each unique dish paired to the culinary creation. This was our last night in Iceland when we could have possible booked a Northern Lights tour. As I enjoyed each dish, I know I made the right decision in Dill over Northern Lights. It was that incredible. Location Tip: we at first walked past the Dill entrance. When you see the Von hotel and next to it what looks like a shopping center entrance, the Dill entrance is there. Very good food, worst dinner experience in a Michelinstar restaurant ever.

So, you probably wonder why I rate a 1 one star Michelin restaurant this bad? We planned our trip to Iceland 'around' dinner at Dill Restaurant. We had dinner there at 2. March and reserved a table at 6.30pm. 18 courses and wine, al looking very good at the menu card. The courses followed up pretty fast. The food was delicious, but we asked the waiter of the kitchen could slow down. We simply needed time to enjoy and digest the food and wine. He came back and said that that was not possible. The table was booked again at 9pm. What???? We book a table in a Michelin star restaurant and they work with time slots? And that message than defines the rest of your dinner experience that night. We never ever dined at a Michelin star restaurant that worked with time slots. Of course not, because it's not appropriate in the whole concept of Michelin. You get a star for the complete dinner experience. Now, believe it or not, in one of the forth coming courses, the waiter wanted to take away the plate of my dinner companion. He quickly realized she was not finished yet and apologized, but it showed how much pressure there was from the kitchen to make sure all 18 courses were served before 8:45pm. We were finished at 9 and paid 69,000 Icelandic crowns. Of course we gave our feedback. No real apologies. They said, they simply needed the double booking in order to make profit. And it also was pointed out at the website. We probably missed that one, since it's about the last thing you would expect from a Michelin star restaurant. You want to eat at Dill's? Go ahead, the food is great. You want to have a relaxed dinner experience for several hours, some chat time in between, sipping your wine, having good conversation with your dinner companions. Skip it. The concept might fit very well with the US eat culture (we have some experience there as well) but it's totally not in line with European 'easy going' eat culture . Final thoughts: the restaurant simply does not deserve the Michelin star, since this is a total concept experience, and not only measured by the quality of the food. And therefore price/quality is way out of balance.

Save your money and eat elsewhere

Disappointing experience eating at Dill. Dined Saturday 2nd March. Evening meal for two. We received a warm welcome. The restaurant is quite unassuming, both in terms of the signposting at the entrance (more or less non-existent) and the decor and lighting. It was simple and rustic, quite charming. The front of house team greeted us warmly and it was great to see the team at work in the open plan kitchen. We went for the tasting menu with wine pairing. Appetisers were very good. Particularly the onion cake. Everything was well executed and introduced with enthusiasm by the team of chefs. As the meal progressed the flavours started to feel very one-dimensional. Whilst all dishes were prepared to a high standard, there was very little variety and the portion sizes were excessively small, even for Michelin star standards. The overwhelming flavour of the meal was strong savoury, mushroom flavour. A stand out exception was the barley with cheese which was light and multi-dimensional and felt unique. The desserts were terrible. Perhaps it’s part of the ethos of the restaurant but there was no sweetness in any of them. A bland parsnip ice cream with caviar on top was the worst thing I’ve ever tasted in a Michelin restaurant. A blue potato foam as the main desert with no sweetness at all. I feel a good meal should have a good balance of salt, sweet, acidity and umami and the meal lacked this variety completely. The wine pairing was the worst I’ve ever tasted. I understand that they have chosen wine with a particular ecological focus in terms of how the wines are made but they all smelt like vinegar and tasted much the same. As a previous reviewer said, the sommelier should look at the faces of the guests when they take their first sips. By far the worst wine pairing I’ve ever experienced at a Michelin starred establishment. For the terrible wine and desserts along with the small portion sizes I would neither return to Dill, nor recommend it. We went for the best hotdog in Iceland immediately after as we’re weren’t full. This was eminently more satisfying than our meal at Dill and cost 740 ISK!

Left disappointed

We booked Dill as part of our Reykjavík stay last weekend and left disappointed. The starter courses, tomato dish and monkfish were lovely. It went downhill when it came to the two lamb dishes, braised lambs head followed by a lamb cut that was sinews’y and inedible. The waiter removed the uneaten food without ask or query, unusual. Parsnip ice cream as a dessert didn’t delight, but the red beets and chocolate was good. We chose the wine pairing as norm. I’ll say little here, I work in the wine industry and someone should sit and observe diners facial and taste reactions after serving the first wines. We enjoyed Tasting Menus with wines at two other restaurants whilst in Reykjavik and thoroughly enjoyed those. As regular Michelin Star and Bib Gourmand diners, Dill needs to have a rethink.

Iceland Michelin star restaurant. Expecting something dramatic nature inspired and using all unique ingredients home to Iceland. Realty- sat down cutlery mug dumped on the table, awaiting to get a table number. The room needs acoustic improvement, and there is no real view hence the window is a little bit out of place. The food was good but nothing made us really go wow! Sommelier…. felt more like a pub visit . Basics like cleaning the table after each serving…. Dumping the bill on the table as soon as the dessert arrives. We love Michelin restaurants, they are not just about the food but the whole experience! None of it made you feel cozy or special. Looked forward to leaving to grab a bite after.

Quite possibly the most magical meal I've ever had

Dill was a highlight of our trip. We snagged a table a week prior (which seems a bit miraculous) on a Thursday evening, having flown overnight from Boston the previous evening. The space itself is simple but romantic--dimly lit with natural elements like wooden slats on the glass ceiling, and gorgeous small bouquets of dried flowers on each table. (The team later overheard it was my birthday, and I was given a signed card and small sachet of dried flowers of my own. It was so lovely!) The meal was nothing less than magic, from the attentive and warm service (it's a full team effort, and the chefs and servers flurry around tables delivering plates, making light jokes and banter, and refilling wine) to the meticulous plating, the meal is a subtle orchestra of joy. Everything is delicious, but also opens up a glimpse at Icelandic cuisine and reiterating on key ingredients in unexpected ways. If you can spring for it, do go for the wine pairings; the selection felt thoughtful and unique.

We had read mixed reviews which nearly put us off going. I’m glad to say we thoroughly enjoyed a lovely evening with a huge list of exciting dishes, served by a very pleasant and attentive staff. We had to book well in advance for this visit on our first night in Reykjavik. Very unassuming entrance in the main shopping street, but from the moment you enter it transforms into a magical experience upstairs. We chose the wine pairings as well and the team were keen to explain the background to the food and drink selections Everything was just perfect - so glad we booked it - just a few of the dishes shown

Avoid if you have simple palate!!

I was very excited for this experience as it was my first time going to a Michelin Star restaurant. However as it turns out, my taste is not nearly refined enough. I was unable to eat really anything as many foods came out cured, fermented or raw. The fermented, dill taste runs heavily throughout every course and although I know the restaurant is called Dill, its all you can really taste. After a few courses, it becomes way too over powering. But not all was bad! The atmosphere was absolutely divine, although tables were rather small and close together. The staff was incredibly friendly and accommodating. My water was refilled at least 15 times throughout the experience. You MUST try the champagne, it is the best champagne I have ever had. It is an ultra brut, so it taste very light and crisp. Overall, DO NOT go if you do not have a refined palate as the food is VERY unique to Iceland and quite unfamiliar. But if you are used to this kind of dining, I would recommend just based off the atmosphere and staff!

Absolutely stunning food and superb service in a relaxed setting. Every course was amazing and all hand delivered/ explained by one of the chefs. Highly recommended on a stay in Reykjavik. They also had no issue handing a gluten intolerance.

Stunning meal from start to finish

We dined here with 2 other couples while on a brief trip to Iceland. Although we had done chef’s dinners in other countries, this was our first Michelin experience, so we went in with high expectations. We were thrilled that they were able to accommodate dietary restrictions (I am pescatarian and my husband has Celiac). Definitely agree to the champagne that is offered as you first sit, it is delicious. We opted for the wine pairings because we wanted the full experience. The sommelier was a young man who was very well versed in his wines and was happy to answer our questions. The food was exquisite. Every course offered different flavors and textures. It was truly quite the experience. We all loved discussing which dish was our favorite (the cod) or what we wanted a huge bowl of (the potato-mushroom dish). My husband was thrilled that they even made him gluten-free bread. I am doing the food no justice by attempting to describe it so I will stop. Throughout the meal, service was efficient and ensured you were never without a napkin or empty glass. You left full, but not stuffed. It was the perfect amount of food leaving you continuously discussing the dishes the rest of the evening. We are so happy we planned ahead to dine here, it was a definite highlight of our trip, and a must-stop for anyone who appreciates fantastic food.
